Rainforest Acai Smoothie Recipe

This doubles as a great snack or a great dessert (a few hours after a meal). Acai is a fatty fruit that doesn’t digest as quickly as high water-containing fruits, so it is one of the few fruits I use in desserts. Acai can be purchased frozen in health stores and made into smoothies.

Ingredients (1 serving size):

  • 2 cups unsweetened almond milk
  • 1 packet frozen acai
  • ½ Tbs. raw cacao (optional)
  • Stevia to taste
  • ½ avocado (optional to make thicker and more filling)

Directions:

Using a good blender, blend the acai and almond milk at low speed until you’ve broken down the Acai, then move to a higher speed. Once it is smooth, use the Stevia. Add the ½ of an avocado if to make a denser snack or desert. Enjoy!

Beauty Secret Tip: Açai is loaded with beneficial nutrients and antioxidants, including Omega 3 fatty acids, amino acids, minerals, key vitamins and fiber.  The Omega 3 fatty acids found in Açai maintain the structure and fluidity of cell membranes, facilitating the inflow of nutrients and the outflow of waste products, promoting youthful, smooth and radiant skin by keeping skin cells hydrated and strong.

Could we substitute other berries if we have a hard time finding acai? If so, which ones would work? Thanks!

Are the Acai frozen packets the same as the frozen Acai berries in making your recipes? and whats the difference between using regular honey and raw organic honey?

      Hi Desiree,
Raw organic honey contains more of the natural enzymes and vitamins present in honey, vs. the commercial, super pasteurized sort. I use the frozen packets – have never seen the acai berries loose. xx

    Hey Kimberly,
Best wishes from Germany and thank you for your amazing book! I want to try your Rainforest Acai Smoothie but I can’t find frozen acai packets here in Germany. Is it possible to use powder instead?

    Hi Kim,

If frozen acai berries are not available in any of my health stores, is there a brand you recommend that I should order? I would love to incorporate acai into my diet but need to know what to get!
    Thanks Kim!
